My experience is that someone who threatens to rent the place out, and change the will if you don't do exactly as they say, are also the type, who don't have any loyalty to you. By this, I mean you could work for free another 20 years, do something to tick him off, and give the farm to someone else, just to show you who's boss.
I think you have two choices.
Either, call his bluff, and get some changes made (which may include not getting the farm).
or
Be his slave for the rest of his life, and hope that he follows through on giving you the farm, and also that the nursing home doesn't take it.

Do you think he'd be willing to let you get some financial gain from the farm in baby steps? Maybe having a few of 'your' cattle in the lot? I was lucky, my dad was easy to get along with, as far as taking over, and basically, I (and my brothers) started with a couple cows, and saved back more heifers every year, as he saved less and less, until the cow herd basically belonged to us kids.
