Round up as a harvest aid does happen but is by no means common place its not really used in my experience to ripen wheat. But to kill weeds in the wheat. If wheat is so weedy that it needs sprayed its not very good wheat so I would imagine that not much makes it into the supply chain every year. About the gluten I don't know but one thing i heard is most bread has gluten added especially multi grain bread. look at the multigrain bread at the store its as light and fluffy as the loves of white bread almost. Once in a while i bake bread and one of my favorites is made with 100% whole wheat flour the loaf feels like a brick and just one slice toasted with butter is good enough for breakfast. so i am pretty sure all these multi grain breads have got a lot more gluten than is found naturally in wheat flour
