I believed the processed/boxed food thing as well until my wife started having problems with gluten. We eat little to no processed food, make all our meals from "whole" ingredients, most of which come from local sources. Eliminating the wheat is incredibly hard, even if you don't eat boxed food or prepared soups, wheat is in many condiments and sauces. It sucks cooking without soy sauce and worcestershire. Using other starches as thickeners, like potato starch or tapioca, is incredibly frustrating as they react very differently and unpredictably than flour.
