Celiac is real, and I don't doubt some are sensitive to gluten, but I think it is mostly a fad.  The placebo affect is very powerful and fad diets have been very popular the past few decades.  No question that wheat demand is down resulting in lower prices, but no matter, I can just barely grow corn way past the "fringe" so that is what I am switching acres to.
