One of my friends has a PhD in this sort of stuff. She says that many modern allergies are actually due to increased nutrition and health. Your body’s immune system is wandering around looking for something to do and suddenly - Hey! I can attack that! Now you are sensitized to that stimulus and, Presto, allergy.
She says if you are living in dirtier conditions, fighting off more common diseases, and less well nourished (unfortunately, stereotypical of many developing economies) you are much less likely to have these modern allergies because your immune system is beaten down all the time.
I find that a reasonable explanation, and I also imagine more folks slip through medical cracks where there is less access to medical care, time to obtain medical care, and access to a wide variety of processed foods.
And I would say a cleaner environment in general. Our homes and public spaces and food is cleaner and safer than ever. So when our body runs across something more potent than usual it overreacts. At least that is my unprofessional opinion.
