Not answering your question, but why people choose to not eat gluten is beyond me. Maybe just a fad. My wife has celiac and it is terrible. There is gluten in makeup, shampoo, laundry detergent, not to mention spices, rubs, chip dip etc. Any trace affects her. Kinda wanted to blame it on gmo but like you say there is no such thing as gmo wheat.
