| We find good quality thick cut side pork in butcher shops. Our most common use, up until now, at least, is to make bean soup. A pound and a half of pinto beans, same amount of side pork fried fairly crispy, fried onions, hot yellow peppers to taste - and after frying the side pork dump however much of the fat in the fry pan in the soup along with the pork. Don't buy your beans at Safeway or Walmart - buy them at a Mexican store if possible. If a diet would only include one thing, I could live on that soup. But, I don't suppose pinto beans are good with a low carb diet.
But, yes, try butcher shops for side pork. I'm sure they can get it in for a person. | |
