 Pittsburg, Kansas | Beans are pretty carby thus I have never really considered them.
But how low carb a person chooses to go makes a world of difference. For us at 20 or so grams that pretty well limits us to the green above ground vegetables. But if a person would go up to say 120 grams that opens up a lot more possibilities. Things like carrots will work in modest portions then.
So it just depends on "how low you go" what and how much you can eat.
For a young healthy person that just wanted to keep from making the food mistakes us old geezers have made, they probably could get along great eating about any of the foods including potatos as long as they limited or excluded bread and avoided the highly processed foods that come in a box. By sticking to just whole foods and avoiding the real sugar sins like gallons of soda pop and sweetened drinks, they might be able to live their whole life without developing insulin resistance and metabolic problems while eating a large range of foods. Oh, and quit the snacking and eating all day long. Stick to two or three meals a day with no snacks.
But for a guy like me that abused the pancrease severely in my younger years and did not know enough to do much better through my mid years, I have damaged myself enough that now I have to be much more strict than someone who has remained metabolically healthy.
