Several of the Mom and Pops around here are open 6 days a week early to about 3pm. Several have found evenings dont make enough and or want the time at home not working.
Most are busiest Sunday morning. Usually a zoo.
above seems to work best ...no need for high end meals or chefs & gives everyone some familyéhome life
