Subject: RE: Thinking about opening a restaurant

Pontiac, IL.
As a LOT of other replies, VERY HARD to make a go of it. Had a relative that owned and operated a successful restaurant and bar for years. But he kept a close watch on everything. Said profit on food was nothing, compared to profit on booz. He also had home made pizza. Said the profit on pizza was equal to profit on all other food. One of his biggest problems was waitress'/cashiers/bartenders skimming money or giving their buddies too many free drinks. A camera on the cash register and the bar helped that. We had a fish n nut fry at our shop a week ago. Lots of deep fried food. The time it took me to clean the deep fat fryer the next day, made me think: NEVER would I want a restaurant to clean.
