Food cost kills most restaurants.

We had one that was open for maybe 75 years and they did sandwiches from 5:00 am until 3:00 pm. They developed a loyal clientele that accepted what they did for the price they charged. Nobody got rich. The owner who closed it worked there from high school to 80 years old every day.

I agree, dairy is easier and may be more sustainable.

Catering may be a better option. If that goes well, maybe turn that into a daily business.
