What's wrong with addressing someone as 'Sir' or 'Ma'am'?

Would they prefer to be addressed as HEY YOU? :-)

Only one time can I recall where somebody used ma'am as being rude. My mom was in the hospital for strokes. This was before she was diagnosed as having cancer. She couldn't hear or see good due to the strokes and had been without food most of the day because of all the medical tests. Mom had asked for lunch, but it never arrived. By this time it was after 4 pm and so she asked a nurse's aid if she could please have something besides a sandwich since sandwiches were all she had the days before in the hospital. My mom asked for soup and that's when the aid raised her voice and said, "YOU SHOULD BE THANKFUL YOU CAN EVEN EAT... MA'AM!" and then walked out the door.

It took another nurse to ask again to find out why the lunch never arrived. By the time a meal came it was after 6PM and mom was already so weak from the strokes and lack of sleep.
