I make an assessmnet of their age before letting sir and maam go. If they're in their seventies and older seems respectful. I'm 58 and someone called me sir and told him I'm not quite that old. If you call everyone sir and maam, it's just a habit with you. I would like to call them this out of respect and not habit. just my 2cents.
