1234 - 1/26/2014 15:46 A few years ago when a fat steer sold for about $750 I went to the supermarket, one of the big regional brands and recorded the prices of the various cuts of meat, including some varietal cuts etc. I then applied these prices to the standard cutout formula and it calculated that the retail value of the $700 steer was worth not quite $3000. This was a 400% markup. Now I know that processing and transportation costs money but not that much. Somebody was making some money here. This gets right back to the issue of transparency. Retailers take the biggest share of the markup. |
