What's your end goal? You mentioned grass fed stock, are you wanting to finish them on your cover crops? Are you willing to hold tillable ground out for grazing for a season? If not it sounds like you already have a handle on cover crop planting, buy some weaned calves in the fall and run them until its time to plant then sell them or place them in a feedlot to finish. Build a simple shipping/receiving lot and put a hot wire on the inside. Run new arrivals in the lot for a week then just use single wire around crop fields so it's not permanent and cheap/easy to change or remove.
