You could try and go the route of running someone else’s cows on your ground after harvest until spring, cover crops or not. Wouldn’t take to much of fence, most around here just have a single strand of hotwire. Wouldn’t have to deal with them calving/bulls/during harvest and planting. I guess it depends how in demand stalk grazing is in your neighborhood. If you have water to fill stock tanks and you put in the electric fence I’m sure someone would run them.
