If you work for a hospital and they are trying to prevent transmission of COVID in their hospital, they are going to “encourage” you to get vaccinated, Personal choice not withstanding. Some are going to require you to be vaccinated.

They’re not so much worried about your health as you being a vector to transmit the virus to patients. Of course you staying healthy and being at work is good for the organization as well, but not quite on the same level as not infecting patients.

Nursing homes fall into the same category. They are a setting with lots of vulnerable people in close proximity that they are doing their best to keep healthy. If they decide their best includes having all the staff vaccinated, and they’re willing to loose employees over it, then they have the power of the paycheck.

Your personal choice does affect others because vaccination isn’t 100% protective even across the population as a whole. Old people probably aren’t protected at the same level as younger folks. Then there are communities or workplaces where fewer people are vaccinated and the virus can spread almost unimpeded and maintain the epidemic instead of ending it.

Still, it’s your choice. It may be one that limits what you can do and where you can go, but it’s certainly your choice.
