Why don't US guys guys grow high value crops??

Had a chance to travel this past summer in part of the area you describe. Crossed into Canada on the Bluewater ferry from Marine City on our motorcycle. Noticed as we travelled east there was more vegetable production in general. Do you have buffered areas that do not get as cold due to the lake water? Also, appeared to be some sandy loam soils? If so, those are more conducive to some of the high value production you mention.

One interesting sight....fields of dill being grown. Saw what appeared to be three 80 acre fields growing within a mile of each other.

We all tend to grow what we can sell....high value crops require a very different market and marketing mindset.

Just some thoughts
