Pittsburg, Kansas | I have thought about that. If a large portion of the population were to change eating habits, it would change a lot of things. Some stuff the demand would drive the prices up and other we would have way too much.
I seriously don't think we have much to worry about, at least in the short term, say the next 10 years or so. Public perception changes at a glacial pace and I don't see people giving up sugar and replacing it with fat on any grand scale anytime soon.
The benefits are availble to the few that find them, but the masses are not likely to change habits much. In my opinion. I have been known to be wrong though. A lot. And my timing sucks even if I get it right.
