| They should be good with anything you might have with eggs. In our experience, this is a fantastic way to eat eggs - and we can eat them every day without tiring of them. You might think these wouldn't be enough different than scrambled eggs - but they are. You need a good hot plate with low sides so that you can get under them without tearing. Also, something like a lefse turner - you can see the one we use, and it works great. The trick is to just use enough flour (coconut, rice, regular . . . ) to barely hold them together without tearing. that way they are very delicate. Most any mild works, but coconut milk works much better than - say - soy milk. | |
