I sure don't notice any, but tastes/sensitivities vary, of course.

Just substitute regular flour and regular milk and any oil. I think it would just raise the carbs a bit. But, I'm not sure if the amounts used would be significant or not. Also, the amounts of each are just whatever works best for a person. Only use just enough flour (whatever kind) to hold the crepe together for turning. Experiment until you get too little to hold it together and then put back in the last little bit. Doesn't take much, and various types of flour act differently. You will need a good hotplate with low edges that does not stick, a wooden turner - like a lefse turner, and you'll need to use some kind of non-stick spray (I think) - I use coconut oil, but Pam is the original.
