And what you are saying is true. The continental breeds will have bigger, courser, muscle fibers as a generalization. Some of that can be overcome by selecting higher marbling score and tenderness score bulls,,,,but those are harder to come by in continentals. But then again, I'm a hobby farmer, what do I know
