My customers prefer smaller to midsize steaks. I usually harvest my steers at 13 or 14 months of age. I'm hoping the Fleck bull let's me get more steers to 1000-1100 lb at that time. Steak size should not be too big at that age and weight, even from a larger bull. I am licensed to sell retail by the pound, I don't sell halves or quarters on hanging weight.



It doesn't matter if you sell buy the lb or hanging on the rail, quality is what matters. You are sacrificing quality to achieve a selected weight. Continental breeds will add weight but decrease quality. These changes are known and proven. When you get a fleck and a hereford slaughtered, ask the butcher to cut them between the 12th and 13th rib and take a picture of the ribeye. Take a second shot with a stainless ruler over the ribeye. Post the pictures on here.
