I think you need to talk with your children AND their partners first.
Probably with someone who works with succession plans for farms.

Then you will be better able to talk with lawyers and accountants on how to carry out the plan.

BTW had a farm across the road that was willed to the son who stayed home and worked it but only until his death since he was a bachelor then it was to be divided up among the rest of the family.
He lived well into his nineties but never really kept up buildings in his later years.
Outlived several of his siblings and so when the time came to sort it all out and divide it all up many voices were in the chorus about what should happen from grandchildren who were mostly too old to be interested in farming it themselves anyway.

I do not think it is wise to try to control what your heirs do with what ever you leave them.
Trust them to do what is right for them and their family at that time or do not gift it to them.
