How about SWEET POTATO CASSEROLE? I'm talking the kind that one year I didn't fix it and everyone asked where it was.

3 cups mashed sweet potatoes ( I bake them the day before and then peel and mash)
1 cup sugar
1 stick butter (please, don't use margarine)
1 cup coconut
1/4 cup milk
2 eggs
1 tsp vanilla
Mix all these together and put in casserole dish.
Topping:
1 cup brown sugar
1/2 cup plain flour
1 stick butter, melted
1 cup chopped pecans
Mix butter, sugar and flour. Add pecans. Spread over top of sweet potatoes. Bake at 325 for 30 minutes.

I usually make 1 1/2 recipes of the topping. Kind of like pecan pie over the top. Also, if you use a large
casserole, say 9x13, you'll need more topping!
