It just isn't Thanksgiving in my corner of the world until you've cut the Buttermilk Pie. Even though I'm a Kansas girl I love this Texas tradition! We have the traditional turkey dinner at our house and pot roast for Grandpa. He doesn't eat anything that flys or swims...I'm thankful for the opportunity of being head cook for my crew. The more the merrier!

Buttermilk Pie

2 cups of sugar
3 tablespoons of flour
1 stick of real butter softened but not melted
5 eggs
1 cup of buttermilk
1 teaspoon of vanilla
3 tablespoons of lemon juice/or the juice of one lemon
9" deep dish pie shell/uncooked

Thoroughly mix flour and sugar until well blended.
Cream sugar flour mixture with butter until completely creamed together
Add one egg at a time mixing thoroughly before adding the next one
Add buttermilk, lemon, and vanilla and blend until smooth as silk
Pour in uncooked pie shell as full as you think you can carry it to the oven and bake at 325 degrees for 1 hour

Note: if you have a small amount of filling left that won't fit in the pie shell just bake it in an oven proof glass container and eat it when it cools!
