So my question is doing it this way where you are paying the processing, do you limit to what they can have processed? Say anything smoked or made into a sausage type product has to pay extra for that?

Im curious because lets just say someone buys a half from you. They got kids at home and a quick easy meal is hotdogs so they say they want 30# of hotdogs. Well they also really like beef jerky and decide that they want 30# of beef jerky made up out of the round. And they want a quarter of the ground beef they get pattied into hamburger patties. Are you covering the extra cost? Do you bake a scenario like I just described into your cost/# and if someone just gets the basics your adding extra to your bottom line?

I see a lot of people saying they charge 3-3.50/# including processing and this scenario comes to mind that could end up costing a lot more money than a person is planning on when setting that price.

Basic cut sheet. Anything smoked or cured is extra.
