SE Wisconsin | I am at $2.75 per pound hanging weight plus processing. Normally is about $640 per quarter and I deliver it to the customer. It's fun for me. The people buying are friends, family and customers of my day job. The beef customer can choose the cuts etc. I normally refer them to the butcher shop directly to make those decisions. Keeps me out of it. But, I should be a little more knowledgeable in this area I guess.... All part of the process.
I would really like to start selling to restaurants or caterers at some point.... Haven't figured out what that all entails yet though. In time... lol
