Cullom, Illinois | Unless you have the land and financing for a big confinement building, the small nitch market seems to be the way to go. Raising Berkshire, Poland’s , or other heritage breeds and seling direct through farmers markets is getting more popular all the time. Doesn’t have to be organic as I think lots of people just want fresh, well cut meat. You have to be good at marketing yourself and your product. And it will take a while to build a customer base. But I’ve seen some local guys do very well for themselves. And with little to no debt compared to a confinement building.
