 Here is my recipe for 2 homemade pizzas....


In a large bowl add...
-6 1/2 cups of flour (I mix half white and half whole wheat flour)
-4 tbsp of white sugar (you don't have to add sugar)
-2 tsp salt
-4 1/2 tsp of yeast (I swear by instaferm... try a foam test first to make sure you have good yeast if it's another brand). 


Add 4 tbsp of butter or olive oil and cut into the mix with a pastry cutter.


Add 3 cups of warm water.


Stir with fork.


Adding flour to prevent sticking, knead the dough for 5-10 minutes (less kneading is needed with whole wheat flour).  Keep kneading until you get a good consistency.


Leave in bowl to rise (about 30-60 minutes).


Cover with a tea towel.


Prepare pizza toppings, for one pizza I have pepperoni and the other pepperoni, pineapple and mushroom.  You can add anything you like, leftover chicken, ham, green peppers, etc.  Also grate about 4-6 cups of mozzarella.  I use canned pizza sauce but you can also use fresh tomatoes boiled down as a paste. 


After the dough has risen it's about triple in size.  Punch down and divide into two balls. 


Rub a tbsp of olive oil on the pans to prevent the pizza from sticking.  I prefer these pans with the vented holes on the bottom.  Without the holes I find the pizza burns/or the crust is too hard.


The dough separated into two balls.


Sprinkle counter and dough with flour and roll into the same size as your pan.


Add sauce.


Spread sauce evenly.


Add mozzarella evenly. 


Place your pepperoni.  Add more cheese on top for double cheese.


Place in preheated oven at 425F for 15 minutes (not longer). 


Cooked pepperoni and cheese.  Let cool on rack for 5-10 minutes before cutting.


Prepared deluxe pizza.  (Follow same as pepperoni, sauce, cheese then toppings).


Cut your pizza.  I find it's good to invest in a good sharp pizza cutter for quick accurate cuts.


Cooked deluxe.


Ready to serve!!  :)
