I also only have silver maples to tap so it takes almost 50 gallons to make 1 gallon of syrup. Use a lot of firewood and don’t get much sleep the weekend I boil. Once going I don’t shut down till done.

I will get some ash in the syrup but filter through a cheap bedsheet before I do the finish boil. I’ll reduce 90 gallons to about 5 then filter it. Then put it on a propane burner and further reduce it to about 3 gallons. Leave this sit overnight to allow any remaining minerals/ash to settle out and pour it into a clean pot, leaving the sediment behind. Never noticed a smoke flavor.

Reheat it and bring to 218-220* and bottle hot. Have never had a mold problem.

Certainly not a professional operation but never had anyone turn down my syrup.

Made the mistake once of trying to boil in the house on the stove. Only got about 12 gallons of sap 1 year and did that on the stove in the house. Never again. Too much moisture in the house and used a lot of propane.
