North of London | My wife thinks the temp is 7C above the boiling point of water and that needs to be checked the day you are taking it off as it changes with air pressure.
Still trying to think how to describe the drop method.
Another way to tell is when it 'slabs' off the ladle rather than just drips off.

BTW I think it is around 40 to 1 if you have hard maple but even individual trees have different concentrations.
The earliest sap makes the lighter coloured syrup
