We are going to try collecting a little and boil it down to syrup, so the grandsons can have that experience. But we are new to this. We have some taps on the way and some propane burners we can use to boil the sap outdoors. I know it takes something like 50 units of sap to get 1 unit of syrup. My understanding is that the sap runs best when the temperature dips below freezing at night and rises above freezing during the day. And I know it's about this time of year. Beyond that, we could use some guidance! Anyone collecting yet? Can you use more than one tap on a large tree? I know it will depend on the year but how much sap can you expect for a medium-sized tree? As for processing, I imagine it is possible to scorch the syrup toward the end if you have the burner too hot or don't keep it stirred. How can you tell when you are "there" with it? Any other information would be greatly appreciated! |
