In case you missed below:


I am my mother’s son and never make it the same twice, but the high points:
2-3# breakfast meat ham, bacon, sausage
15-18 eggs
1-2 peppers, green and red
1 pkg fresh white mushrooms
12 oz shredded cheddar
½ cup milk
1 tsp salt
½ tsp black pepper
1 cup frozen hash browns, enough to barely cover the baking pan

Fry the bacon and sausage, then drain
Grease 9 X 13 pan with the grease
Put in enough hash browns to barely cover bottom of pan
Layer in breakfast meat. I sometimes put ham on one end, sausage on other.
Then layer mushrooms, ½ of the cheese, and some peppers and anything else you like, onion etc
Crack and mix eggs with milk and seasoning, lots of options here
Pour over the layered ingredients.
Finish with peppers and cheese to give some color
Bake at 350 for 35-40 minutes
Top with parsley and some more cheese while hot for color.

I keep in in the baking pan and cut whatever size I want for several meals when I am at the shop. Nuke for 90 seconds




I came across George Stellas from a family friend and publisher of his last cookbook. Buy it. It is from a guy who really loves food and needs it to be good but simple.
