Wisconsin had it's first dove season about 6-8 years ago. I had watched dove hunting in South America on TV and always wondered how they would taste. After talking with a cousin we decided to try it and must admit hunting them was enjoyable but not as much as eating them. Wrapped in bacon they are excellent! One thing you don't have to worry about is hunting them to extinction. They are a challenging target and between my cousin, my youngest daughter and I, we shot a dozen birds using about 100 rounds of ammo. I would bet there will be many hunters that will try it but like WI after a few years you will hardly see anyone hunting them. I'm sure this is not the response you wanted to hear but any game animal, when managed correctly, can and will maintain adequate population numbers, provide income for a state and also provide a renewable source of food for people.
