I like the prior posters suggestion that you discuss the matter in person and request payment by a certain date. The second step would be to send a certified letter demanding payment by a specified date. After that you need a lawyer to send a letter. After you win a court judgement your lawyer can demand they provide you with a list of assets and liabilities. In most states you can easily seize all bank accounts. With a little effort you can take personal property.
