I have been on both sides. I currently have a top notch guy. I pay him well and rent him 40 acres and allow him to have his own livestock. I have room for another full timer but none have shown any indication of reliability. I agree, you can have all the other jobs you want, but its not farming. It takes a little commitment to plan your life around the job and not your job around you life. I worked on a farm I eventually took over. It can work, and I would return the favor.
