Subject: wheat is not all the same


While I have no first hand experience, my friend has a doctor buddy who is T1 diabetic and he can eat a whole pizza crust made from an ancient type of wheat and it will not spike his insulin at all, unlike modern wheat varieties.

So much of our food today has been bred for yield and sugar that it barely resembles what it used to be like.
