+1 on letting the chicken sit for a bit before freezing.
It's like letting the steer "hang" in the cooler at the butcher before freezing packaging. Except it's chicken. I've heard various different time amounts, from 24 hr to 3-5 days on ice in a cooler or refrigerator before freezing.
