Chickens should rest in the refrigerator 3-5 days to help relax the fibers so they are more tender....James
Are you saying to do that before cooking it or after processing it before they are frozen ? We have 30 Cornish cross about 3 weeks old and I don't want to end up with tough chicken . I helped a friend years ago butcher a lot of broilers . We cooked one when we were finished . Tough.
