We get some huge chicken breasts while we are in Bonaire for the winter that are always tough. Wife marinates them over night and that helps.

Instant Pot will make it tender. Pressure cooked. But that ain't gonna be fried chicken. Pressure cook it then batter and fry it, but most would not want to go to that trouble???
