If chicken is frozen, I let it thaw for 3 days. Make sure the muscles have relaxed before cooking. As soon as I butcher, I cut the feet off and put the chicken in a cooler with a bag of ice in the bottom with some water in it. When done or ice chest is full I put another bag of ice on top and put in the refrigerator after a few hours. The next day after the leg muscles have relaxed, I bag the chickens and put back in the refrigerator for 2-4 days before freezing or cooking. The older the chicken, the longer the time....James
