Tough chicken

Subject: Tough chicken

Every time we do broilers they are way tougher than store bought chicken. We seem to butcher them timely, they are still smaller than store bought chicken. Is it in the prep,or do they do something different to make them less tough. Most recent ones are juicy, so not over cooked, just stringy. Have done rotisserie and oven cooked on most recent batch.
