My first guess would either be the potentiometer crapped out, but since you said you can still feather it, I wonder if you lost contact in a micro switch in the joystick. The micro switch will toggle the direction, the potentiometer will set the rate.

I don't remember much on those old bombers, but I would be checking the output of the joystick before I went after the hydraulic system or valves...……...
