2 hours to 140 either it was a small loin, or a hot fire? Was it loin or tenderloin? Tenderloins are like 2-3 lbs and pork loin is generally >10lbs. Normal sized pork loin at about 225* takes around 4-4.5 hours to get to 145 I.T.

Hickory can be a strong smoke but if it tastes like an ashtray I'd bet you had a lot of white smoke which will taste like crap.. You want the smoke thin and blue not billowy and white. Use lump charcoal with hickory and apple chunks thrown in for smoke is what I do on an offset. And always start the charcoal in a chimney first so it's hot before it's in the firebox.
