Is your wood seasoned or green? How long did your fire burn before putting the meat on? You've got to get the fire rolling good before putting the meat on. That said I prefer pecan wood as it's a milder flavor. And green wood of any kind creates lots of smoke that can overpower the flavor. Keep trying and you'll figure it out.
