I agree that hickory can be quiet strong. Have any pictures of your cooking rig? Offsets can be a little tricky to master. Yes, a hot fire makes the difference. I’ve had wood that wasn’t cured and wouldn’t burn “hot” enough to be clean. I also like to leave loin on for about 1hr and then tinfoil until done. Gets plenty of smoke and a nice smoke ring but doesn’t over do it.
