| Nearly all the "local" fresh vegetables produce once a year in the corn belt climate, yet the consuming public wants the same selection every week of the year. There are very few who buy the harvest that month and store for the year. Just watched a Jerry Apps video about growing up on a farm and he pointed out so long as his folks lived on a mid Wisconsin farm, they never bought vegetables in a store. They raised a large garden and his mother canned enough to last them the rest of the year, beef and chicken too were canned.
