I cook for 1 also. Would rather cook for many but...
Crockpots are great. Put stuff in in the morning on low ready for supper in the evening. I do some stuff like baked chicken breast and baked potatoes in the oven I put some stuff on the chicken - mayo ora bit of butter and parmesean cheese salt pepper ect in a pie plate lined with foil and wrap the foil up around the chicken that way it doesn't dry out. Put the potatoe inthe oven first it will take longer. I put things in the oven then go do chores and supper is done whenI get in. I will do meats on the George forman grill inside. Steam veggies in a steamer pot in the microwave. Pampered chef has a great plastic one that I use and also great for heating left overs. Those frozen potatoe patties I like so I do those and a burger ect.
It is a learned skill.

I do not enjoy most prefab meals. Some of the chinese stuff is good. The meals for 2 can be one or two meals.

Speaking about meals for one Wonder what I am having for supper?
