| There are soil tests for sulfur plus pH. If the pH is high, you don't need lime for calcium and gypsum supplies S and has no effect on pH. If the soil has plentiful calcium like mine you don't need gypsum either. Use AMS to add sulfur.
Trouble is that ISU says they find no correlation between soil tests and crop response to added sulfur. So the only test takes all year, yield with S applied in strips. Fortunately S doesn't hurt and S from AMS comes with a useful amount of N or gypsum comes with calcium if you need calcium.
